Spicy Baked Chicken Sandwich

Spicy Baked Chicken Sandwich is a healthy and tasty alternative to the restaurant options. Enjoy with a sweet and tangy coleslaw. Recipe makes 4 sandwiches.

Ingredients:

For the Chicken

4 small boneless, skinless chicken breasts

2 cups of pickle juice

3/4 tsp garlic powder

3/4 tsp paprika

1/8 tsp cayenne pepper

1/8 tsp kosher salt

1/8 tsp ground pepper

For the Sandwich

4 Tbsp mayo

1 Tbsp Sriracha

1/8 tsp ground pepper

4- 6 pickle rounds

4 1 ½ Tbs soy sauce

4 rolls such as Brioche

 For the Slaw

1 tsp Dijon mustard

1 tsp olive oil

1/8 tsp kosher salt

2 tsp red wine vinegar

2 cups coleslaw mix

 

Instructions:

  1. Prep the chicken: pound the thicker part of the chicken breast to make it even, about 1/2 inch thick. This helps with even cooking and can tenderize the meat.

  2. Marinate the chicken: Add the chicken to a shallow bowl and pour pickle juice over the chicken so that it is covered. I use Famous Dave’s Sweet n’ Spicy Pickle Chips. Cover and refrigerate for at least 4 hours or overnight.

  3. Preheat the oven to 450F

  4. Make the sriracha mayo: in a small container, combine the mayo, sriracha, and pepper. Set aside.

  5. Make the coleslaw: in a medium bowl, add mustard, olive oil, salt, and vinegar. Whisk to combine. Then add the cabbage mix and toss to combine. Cover and chill in refrigerator until ready to serve.

  6. Take the chicken out from the fridge and allow the pickle brine to drip off, pat until lightly dry. Set on a lined baking sheet. Combine garlic powder, paprika, cayenne, salt and pepper in a small bowl. Rub chicken on both sides with olive oil then spread the seasoning on both sides.

  7. Bake: place chicken in the oven and bake for about 15 - 18 minutes or until the chicken is 165F.

  8. Assemble: Spread the sriracha mayo on both sides of the bun. Add the baked chicken. Top with a few slices of pickles and 1/2 cup of coleslaw mixture. Enjoy!
