Ground Pork Stir Fry

Enjoy the delicious and easy weeknight dinner. The flavors are salty, sour, and sweet. The best part is, you can customize your vegetables to feature whatever you have available.

Ingredients:

For the Sauce:

½ cup hoisin sauce

1 ½ Tbs soy sauce

2 Tbs brown sugar

 

For the stir fry

2 Tbs oil, such as peanut or vegetable oil

1 lb ground pork

2-3 garlic cloves, finely chopped

1 small shallot, finely chopped

1 cup shredded carrots

1 red pepper, julienned

1 cup sliced mushrooms

1 cup broccoli

4 packages of instant noodles, such as ramen or egg noodle pucks

Cilantro for garnish

 

Instructions:

  1. Make the sauce: combine hoisin sauce, soy sauce, and brown sugar in a small bowl using a mini whisk. Set aside

  2. Cook the pork: heat 2 tbs of oil in a large, heavy based pan. Add the chopped garlic, shallot, and ground pork. Cook until browned, using a wooden spoon to stir and break up meat as it cooks. Remove from pan when cooked.

  3. Cook the noodles: before you start cooking your vegetables, start water to boil. You will cook according to the package instructions as you are frying the vegetables. Once cooked, drain the noodles and add to the stir fried vegetables.

  4. Stir fry the vegetables: add the shredded carrots, shredded cabbage, sliced mushrooms, peppers, broccoli to the pan. Stir fry for 2 to 3 minutes until they are cooked.

  5. Combine: The noodles are now added to the vegetables. Add the pork mixture back in and pour the sauce over the contents in the pan. Stir the pan so that the sauce is fully covering the ingredients. Allow to heat through.

  6. Serve and Enjoy: Option to garnish with green onions or cilantro. You can also sprinkle toasted sesame seeds or hot sauce such as Sriracha.

 

Note: you may use whatever veggies you want in the stir fry, just be aware that the cooking time for different vegetables varies, so you may need to stagger your cooking time depending on the vegetables.
