Easy Roasted Potatoes

This easy roasted potato recipe makes for the perfect side dish. Scale the recipe up or down. This recipe serves 4.

Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes

Ingredients:

2 pounds yellow or red skinned potatoes

2 Tbsp olive oil

1 tsp garlic powder

1/2 tsp paprika

3 Tbsp chopped fresh herbs such as thyme, parsley, rosemary (optional)

Salt and pepper to taste

 

Instructions:

  1. Preheat the oven to 450F

  2. Wash and dry the potatoes. Make sure to scrub any excess dirt. Do not peel.

  3. Dice into 1” cubes. Make sure that the potatoes are uniform in size otherwise they won’t cook evenly

  4. (Optional) If you have time, you can soak the potatoes in cold water for up to an hour. This removes some of the starch and can make the potatoes fluffier. If you do this, you will need to drain and dry the potatoes

  5. In a medium bowl, toss the potatoes in the olive oil, spices and herbs.

  6. Place onto a baking sheet. Bake for 15-18 minutes or until tender. Remove and add salt and pepper to taste.
